Ingredients:
Gluten free flour ( ragi, jowar) – 150 GMs
Date Palm jaggery ( or normal brown jaggery) – 150 GMs
Butter ( or olive oil)- 50 GMs
Curd – one table spoon
Some jam for topping – optional.
( makes approx. 10 cupcakes)
METHOD:
Step 1 :
Melt and strain the jaggery.
In a bowl add the flour and mix in the warm liquid jaggery. Add the butter as well. Mix well.
Add a spoonful of curd to this mix.
Prepare the cups.
Preheat the oven. Spoon the batter into the paper cups. Add a few bits of candied fruits or jam on the top just to make it tastier and more appealing. I’ve used a jam that is without preservatives and has pieces of berries in it.
Bake in oven for 25-30 min on 125-130 C.
Ready to eat.
A good item to carry with you when you are travelling.
Optional: you can add chocolate chips , nuts, orange peel bits etc. to the mixture. It is up to your taste as well as tolerance to food items that will dictate adding various toppings.
