Ingredients 

Rice pasta –  200 gms

Onions-        3 medium sized

Tomatoes-   2-3 big ones. 

Garlic-           5-6 cloves

Green chilly – as per taste

Olive oil –     2-3 tbs 

Some pitted black olives

Some fresh basil leaves

Dried herbs – mix of dried basil, oregano, thyme and rosemary.        ( just oregano is also fine)


Step 1.  How to cook pasta—Boil a litre of water in a pan. Add some salt and a spoon of oil in it. When it comes to boil add the rice pasta. Stir it occasionally. Boil for 5-6 min and then strain out the water. Then rinse the cooked pasta with cool water. Keep the pasta aside. 
Step 2. Chop the garlic. Cut the onions into small chunks. Remove the skin and seeds of tomatoes and make a puree of the tomato pulp. 
Step 3. Heat a wok or Kadhai. Add olive oil. Then add chopped garlic and sauté just a bit. 
Step 4. To the garlic add in the chopped onions. Sauté the onions till translucent. 
Step 5. Once onions are soft, add some chopped green chillies and basil leaves. Sauté a bit. 
Step 6. Now add the puréed tomatoes to the Kadhai.  Add salt and some pepper and sauté. Then add some dried herbs. 
Step 7. Add the al dente rice pasta to the onion tomato mix. Mix them all well. Check for seasoning. 
Step 8. Add some chopped pitted black olives and give the pasta a mix. 

Step 9. Rice pasta is ready to eat. 

You can also add zucchini, broccoli, aubergines or other veggies of your choice to the pasta.
